There is many a food which would surely make your family lick their fingers. One of the most common ingredients so as to make some great dishes are the dried beans. You should and must learn to know how to cook dried beans. It must be kept in mind that the dried beans need soaking in water for several hours sometimes may be overnight before getting cooked.
Here is a complete recepie of the Mexican style bean soup. You can really make a Mexican wave with this soup which is chilli-spiked fully loaded with sour cream, avocado and spring onions.
Ingredients to prepare Mexican Bean soup
- 2 onions
- 500g/1lb 2oz pinto beans, or mixed dried beans
- 2 celery stalks
- 3 garlic cloves
- 2 large carrots
- 3 tbsp sunflower or vegetable oil
- Bouquet garni of parsley sprigs, thyme sprigs, or savory, about 2 bay leaves and a rosemary sprig
- 2 x 400g/14oz cans chopped tomatoes
- 110g/4oz pancetta or lardons or bacon, diced
- 1 heaped tbsp cumin seeds
- 2 x 400g/14oz cans chopped tomatoes
- 1 tbsp dried oregano
- 1 heaped tbsp cumin seeds
- Salt and freshly ground black pepper
- 1 tbsp dried oregano
- 60ml/2fl oz dry sherry
- And 1 lime
Way to prepare
- As discussed above soak the beans overnight and then drain the water in colander.
- The onions, carrots and celery should be roughly chopped. Next step is to peel and chop the garlic well.
- Heat the oil in a large pan and then add peeled and chopped materials along with pardons and the bouquet garni.
- Place the lid of the pan and let them sweat until the vegetables become tender as well as juicy.
- Add the beans now along with enough water so as to cover them. At this stage don’t add any salt or anything acidic.
- Let them be till they boil and then boil for ten minutes and then reduce the heat and let them on the fire till they become tender.
- Now add some tomato, oregano, cumin, some salt along with sherry and black pepper. Now juice the lime into the mixture.
- Let them sing for the next 30 minutes, occasionally stirring and crushing some of the beans along the walls of pan till the soup become thick.
- Now remove the bouquet garni and add some more salt and ground black pepper to add taste.
- Now serve them in round balls.
